Vegan Chocolate Shake with Cashew Whipped Cream and Hot Fudge Sauce

vegan chocolate shake with whipped cashew cream, hot fudge and a cherry on top

This decadent chocolate shake has all the trimmings — cashew whipped cream, hot fudge, even a cherry on top — and just so happens to be dairy free and completely vegan

Let’s not do things by halves.

If you’re going to have a chocolate shake, by gosh, have a chocolate shake. Let’s go all out. Get crazy. Go wild. Whipped cream, hot fudge, cherry on top. Throw it all on there. You only live once after all.

And since the shake is made without any dairy and almost entirely free of refined sugar (there’s a wee bit in the chocolate, depending on what you use), you’ll find no regrets waiting for you at the bottom of the glass. A chocolate shake with all the trimmings that doesn’t make you feel sick at the end? Now that’s what I call a triumph.

I need to stop and address something that I feel quite strongly about. There seems to be a sore misconception at play in the world that one can either be a) healthy or b) indulgent but never c) both. Where did we ever come to the conclusion that to care about our health meant being austere and self-denying? That it meant depriving ourselves of all the things that bring us joy?

True health is surely not a philosophy of rejection and denial, but one of embracing and celebration. It’s not about what you don’t eat, but what you do. And most of the damage that we do to ourselves, in my opinion, comes when try to deprive rather than nourish, force rather than allow.

So here’s what I think. If you want a chocolate shake, by gosh, have a chocolate shake. But make it with the very best of ingredients; ingredients that put a spring in your step and a smile on your face. Ingredients that you don’t have to regret later on. Put a cherry on the top. Enjoy it with every ounce of your being and nothing less. As they say, life is short, so make it count. Indulge in your health.

Vegan chocolate shake with whipped cashew cream and hot fudge

total time: 20 minutes

serves 2

For the hot fudge:

  • 1/2 cup (100 g) coconut cream (scooped from the top of a can of coconut milk)

  • 2 oz (60 g) dark chocolate, chopped

  • 2 tbsp maple syrup

  • 2 tbsp cacoa powder

  • 1 tsp vanilla

  • 1/4 tsp sea salt

For the cashew whipped cream:

  • 1 1/4 cup (175 g) cashews

  • 1 tbsp lemon juice

  • 1/4 tsp vanilla powder or 1 tsp vanilla extract

  • 1 tsp honey

  • 1/2 cup (120 ml) water

  • pinch of salt

For the chocolate shake:

  • 2 bananas, sliced and frozen (220 g)

  • 2 tbsp cacoa powder

  • 1 tbsp cashew or almond butter

  • 1 cup oat milk

  • pinch of salt

  • 2 cherries

For the fudge:

  • Place the coconut cream in a small saucepan and heat over low.

  • Once the coconut cream has begun to melt, add the remaining ingredients. Stir constantly until the chocolate has melted and the mixture is smooth and silky. Remove from the heat.

For the cashew whipped cream:

  • Place all of the ingredients into a high-speed blender. Blend on high for 2-3 minutes, or until the mixture is completely smooth without any graininess from the cashews. You may need to use a tamper to press the mixture down into the blade when you first start blending. If you don’t have a tamper, just turn the machine off now and then and scrape down the sides. Once the mixture is smooth and creamy, scrape it into a bowl and clean the blender.

For the chocolate shake:

  • Place everything but the cherries into a blender and blend on high until the mixture is smooth and ice cream like. You may want to stir to make sure you don’t have any wayward bananas that have escaped the blade.

To assemble:

  • Place a generous scoop of the hot fudge into the bottom of each of your two glasses. Use a spoon to smear some of the chocolate up the sides of the glass here and there. Fill the glasses up about 3/4 of the way with the chocolate shake, then spoon a dollop of the cashew cream on the top. Drizzle a little more hot fudge sauce over the top of the cashew cream and then top with a cherry. Cheers!

Leftover cashew whipped cream and hot fudge both make excellent dipping sauces for fresh fruit like strawberries, cherries, you name it. They also happen to be rather delicious over pancakes.
