A freshly picked pea is a revelation; what you get in the shops or even at the farmer’s market can never come close to the flavor and crunch from one snapped fresh off the plant. The little peas inside are so sweet they almost taste like candy. Here’s how I like to use peas in the kitchen:
As a pesto or dip
Lightly blanch the peas and combine them with mint or dill, parmesan and lemon (great as a topping for sandwiches or pizza, like in this chickpea crust pizza recipe ) or mashed up with jalapeño, lime juice and cilantro.
Light dressed in a salad
Slice the peas in half lengthways, following the seem and toss with thinly sliced fennel, zucchini, asparagus or other crunchy green vegetables and dress with the juice of half an orange, half a lemon, a little oil and salt and pepper. Sunshine in a bowl.
In a soup
Delicious combined with coconut, Thai curry spices and fresh lime as in this soup here.
